Carrot Cake/Muffins

This is a simple and easy recipe that you can pretend is healthy because, hey, it's got carrots in it!


Excuse the bed hair, these were for breakfast!

Ingredients:
*1 cup shredded carrot
*2 cups self raising flour  
*1 cup raw sugar 
*1/2 tsp nutmeg
*1 cup water
*1/4 cup oil or Nuttelex
*1 tsp vinegar, vanilla, cinnamon

Method:
1.  Preheat oven to 180C.
2.  Mix all ingredients together.
3.  Bake for 20-30 minutes, until top is golden and knife inserted comes out clean.
