Stuffed Mushrooms

*16 large mushrooms
*1 onion, diced
*2 tomatoes, diced
*1/3 cup breadcrumbs
*2 tsp garlic
*1 tsp parsley
*1 tsp paprika
*salt and pepper to taste

1.  Preheat oven to 180C.
2.  Remove stems from mushrooms and chop.
3.  Chop the onion and fry together with mushroom stems.
4.  Mix together with spices, breadcrumbs, tomatoes and herbs in a bowl.
5.  Spoon into mushroom cups.
6.  Roast in oven for 15-20 minutes or until mushrooms look cooked.

 I definitely will have to try making stuffed tomatoes next time!  Mmmmm.
